Stone structures on the mountains (Ι). Πέτρινες κατασκευές στις Μαδάρες(Ι).

In earlier posts, I had shown you a couple of stone huts on the mountains of western Crete. Climbing higher, I found and photographed a few more. They were constructed to give shelter to shepherds during their long stay on the mountains during summer. Also they were used as a place to make cheese and store it for months till it was processed and ready for sale. Now the cheese that is for commerce, must be made in modern facilities, according to recent rules of hygiene. So, roads are made on the mountains, and all shepherds bring the milk every day to those facilities. Maybe the cheese is still made according to old recipes, but bit does not have the taste it acquired when it was made and stored on the mountains.
Σε προηγούμενες αναρτήσεις σας είχα δείξει δυο-τρία παλιά πέτρινα μιτάτα και κούμους στις Μαδάρες. Ανεβαίνοντας ψηλότερα βρήκα και φωτογράφισα μερικά ακόμη. Χρησίμευαν για την προστασία των βοσκών που έμεναν εκει πάνω ολόκληρα καλοκαίρια, σαν χώροι για το άρμεγμα των αιγοπροβάτων και παρασκευής τυριού και αποθήκευσής του για ωρίμανση μέχρι να πουληθεί στο εμπόριο το φθινόπωρο. Τώρα το τυρί που έρχεται στο εμπόριο μπορεί να φτιάχνεται σε σύγχρονα τυροκομεία με όλους του κανόνες της υγιεινής, αλλά δεν φτάνει στην γεύση το τυρί που παρασκευαζόταν στις Μαδάρες και ωρίμαζε φυσικά στις τρύπες αυτές.

How true that is, Costas. There is an alpage near Lenk, Switzerland where you can buy authentic cheese made under such conditions. There is nothing like it... it is THAT good. And there is more humanity in it, too, and thought.

Thank you for showing us the huts! I've heard of them but never actually seen what they look like.

sometimes the old ways are still the best...but, it is getting to be there is hardly anybody left to pass on the knowledge ... soon it will be a lost art.... sad......
